1 large red onion (300g)
1 cup water (240ml)
1 cup cider vinegar (240ml)
3 tbs sugar
2 cloves garlic. crushed
I tbs salt
1 tsp ground black pepper
1 empty jar (700ml)
Peel and thinly slice the onion longitudinally to make crescent shaped slices. Blanch it in boiling water for about ten seconds. Put the water, vinegar, salt, sugar, garlic and pepper in the jar and shake vigorously until dissolved. Pack in the sliced onion. Allow to cool and refrigerate.
