Warm two plates. You will need a ripe avocado (the knobbly Haas type is tastiest). Put the flesh in a bowl and mash with a fork to the desired texture. (Coarse), Add the juice of half a fresh lime, a very small amount of garlic, a pinch of salt, some chilli flakes (or Jocks Hot Sauce, which has a great smoky flavour) and some finely chopped coriander. The amounts of lime, chilli and coriander should be varied according to taste.

This is often served with a poached egg on top, in which case it’s important that the avocado mixture is at an ambient temperature. Hot egg on icy avocado doesn’t work.
