Ratatouille

2 Aubergines
2 Peppers
4 large tomatoes
3 or 4 red onions
4 cloves garlic
olive oil
salt and pepper
Cut the aubergines into ½ inch cubes sprinkle with salt and leave in a colander to drain for an hour. Cut the pepper into strips. Skin and chop the tomatoes. Slice the onions thinly. Heat about 100ml of olive oil in a large pan and sweat the onions and garlic. Don’t allow to brown. Add the aubergines and peppers, cover and simmer for about 30 minutes. Add the tomatoes and cook uncovered for about 15 minutes. Check the seasoning and serve with bread or rice. Also good cold.
