Kofta Kebabs

900g (2lbs) lamb mince
2tsp ground cumin
4 tsp sweet paprika
1 tsp ground black pepper
1 tsp ground cinnamon
3tbs chopped flat leaf parsley
3tbs chopped fresh coriander
1tbs chopped fresh mint
1 large onion chopped
Put all these ingredients in a bowl and mix well. Take a handful of the mixture and put it in a food processor and whizz it up until it is well mixed. Repeat with the remaining mixture. Keeping your hands damp, knead the mixture until it’s very smooth and set aside to rest for 30 minutes. With damp hands take an egg sized piece of the mixture and form it into a burger shape. Cook on a hot ridged griddle, turning until brown on both sides. You could also make proper kebabs by sliding the mixture onto skewers and cooking over charcoal
