100g flour
150g Panko breadcrumbs
2 eggs beaten
225g halloumi cheese
lemon zest
dried oregano or other dried herbs
oil for deep frying
Mix the lemon zest and oregano into the panko breadcrumbs and season the flour well with salt. Cut the halloumi into bite sized chunks. Dip in the flour, then the egg and then the breadcrumbs making sure each piece is well coated. Fry at 180⁰C for a few minutes until golden brown. Drain on kitchen paper. Season with salt flakes and eat while they are hot.
