Banana Pancakes

350g self-raising flour
1 tsp baking powder

2 very ripe bananas
2 medium eggs
1 tsp vanilla extract
250ml whole milk
butter, for frying
½ tsp salt
Mash the bananas in a bowl and add the milk, eggs and vanilla extract. Mix well. Sieve together the baking powder, salt and flour in another bowl and add the wet ingredients, mixing thoroughly to get a smooth batter. Fry the pancakes in butter over a medium heat until little bubbles start to form. Then flip them over and cook the other side for about 1½ minutes. Serve hot with whatever you like. Maple syrup is good.
