Oven Baked Ribs

You will need one rack of ribs per person. If there is a membrane on the inner curvature of the ribs, remove it, or ask the butcher to do this. Rub the ribs all over with salt and pepper. You can also rub them with other spices such as ground coriander, cumin, chilli and so on. Place on a tray and roast in the oven at 135⁰ C for 3 to 4 hours, until they are tender. Slather the ribs with barbecue sauce and put them under a hot grill until the sauce is caramelized. If you haven’t got any barbecue sauce in, you can make some by combining tomato ketchup, sugar, Worcestershire sauce, soy sauce, hot chilli sauce – in fact any gloopy mix will work, I think. Serve hot, with or without football.
