Meen Mulakittatku (Fish in red chilli)

Serves 2
A piece of monkfish enough for 2
1 large onion
2 cloves of garlic
½ inch ginger
1 tsp Kashmiri chilli powder
¼ tsp turmeric powder
A few curry leaves
Salt
1 tsp black mustard seeds
½ tsp fenugreek seeds
Oil
2  tsps. tamarind..
Heat the oil in a pan. Add the mustard seeds and let them splutter, then add the fenugreek seeds and immediately add the chopped onions, chopped garlic, chopped ginger and curry leaves. Fry till the onions become golden brown. Meanwhile soak the tamarind in half a cup of warm water. If you are using tamarind concentrate, put it straight in. When the onions become golden brown lower the flame and add the red chilli powder turmeric powder and salt to taste.  Fry for 2-3 minutes. Add a little water to it so that it doesn’t burn. Cut the fish into bite sized pieces and add. Simmer for about 5 minutes and serve.
