French Onion Tarts

500g shortcrust pastry
1 knob of butter and a splash of olive oil
½ lb onions finely chopped
4oz Gruyere cheese grated
3 eggs, beaten
4 oz double cream
Roll out the pastry to ¼ inch (5mm) and use it to line your well-greased tart tins. Heat the butter and oil and gently sauté the onions for 8 minutes without browning and remove from the heat. Mix the eggs, grated cheese, cream, salt, pepper and grated nutmeg. Off the heat stir this mixture into the onions. Spoon the mixture into the pastry cases and bake for 15 to 20 minutes at 200⁰C, Gas 6. Serve at room temperature.
