Put the oven on to 200ºC (180º Fan). Wash the celeriac thoroughly and pat dry. Place it on a large sheet of foil on a baking sheet and rub with olive oil and salt and pepper. Wrap the foil tightly round the celeriac and roast in the oven for three hours or so. When it is done, cut into ‘steaks’ and fry in hot oil to crisp up. Serve with blue cheese spread. Combine 4oz blue cheese with 1oz softened butter. Add a dash of Jock’s hot sauce and a tablespoon of brandy. Add 3 oz soured cream. Mix well and refrigerate until set.
