Buffalo Cauliflower Wings

Firstly, put the oven on to 200ºC (180º Fan). Make a simple batter from flour and milk. You may add garlic powder, paprika or any other flavouring to the batter. Break the cauliflower into florets and coat thoroughly in the batter, shaking off any excess. Lay the florets on a baking sheet covered with baking paper and bake in the oven until the batter crisps up, about 10 minutes or so. You could turn them over after 5 minutes. When they are done, take them out of the oven and brush them all over with Buffalo sauce, or any other barbecue sauce:
1tbsp tomato purée
4tbsp oil
2 tbsp soy sauce
1tsb cider vinegar
1tsp smoked paprika
¼ tsp chilli powder
1 tsp garlic powder
1 tbsp sweetener such as honey
2 tbsp water
Put the florets back in the over for a further 10 minutes or so and serve hot with a dipping sauce made from:
3 tbsp plain yoghurt
1 clove of garlic, crushed
½ tsp salt
1 tbsp chopped coriander or parsley
Rub the inside of a small bowl with the crushed garlic, add the other ingredients and mix well.
