Sag Paneer (Paneer and Spinach)

450g paneer cut into 2cm cubes
4 tbsp ghee (cooking oil will do)
1 inch piece of ginger
1 tsp turmeric powder
½ tsp chilli or paprika powder
1 tsp cumin seeds
2 green cardamoms
1 inch cinnamon quill
2 onions finely chopped
1 tsp mustard seeds
1 tsp poppy seeds
 1½ tsp salt
2 cups of cooked spinach
½ tin of chopped tomatoes
1 tsp garam masala
1tbsp lemon or lime juice
Fry the paneer cubes in oil until golden, remove and drain. Grind the first 6 spices into a paste with a little water. Fry the onions, mustard seeds and poppy seeds until golden. Add the paste and fry for 2 minutes. Add the paneer and spinach. Mix well, adding some water if it looks a bit dry. Before serving, sprinkle with garam masala and mix in the lemon juice. Serve with rice or chapattis.
