Apple Achaar

1 large cooking apple, thinly sliced
1 onion, sliced
7 green chillies, sliced
2 tsps. sugar
2 tsps. panch puran, ground
1 tsp salt
¼ tsp turmeric
Oil
Panch puran is a mixture of five whole spices: fennel, cumin, onion seed, fenugreek and mustard. If you haven’t got any, improvise. Heat the oil and fry the panch puran. Add the onions and soften. Add the turmeric, sugar, salt, chillies and apple. (You may add fewer chillies and I removed the seeds as I didn’t want it too hot). Fry until the apple is just cooked. Allow to cool. Put it in a jar and refrigerate.
