Hummus

1 x 400g tin of chick peas
4 tsp tahini (light or dark)
2 tbsp lemon juice
1 clove garlic crushed
3 tbsp extra virgin olive oil
½ tsp salt
paprika
parsley or coriander
Rinse the chickpeas in cold water, reserving the liquid and a few peas for garnishing. Tip into the food processor. Add the tahini, crushed garlic, salt, lemon juice and 3 tablespoons of the reserved liquid from the tin. Turn on the food processor and slowly pour in the oil while it runs. When the mixture is fully combined and smooth, test it for consistency. If it is too stiff, add a little more liquid. Then tip it into a serving dish. Drizzle with some more extra virgin olive oil and decorate with a few whole chickpeas. Sprinkle with paprika and finely chopped coriander or parsley leaves for colour.
