Grease the bottom of a casserole dish with some oil or butter and put in enough hake for four people. If you can’t get hake salmon will work quite well. In fact any firm meaty fish will do. Season well and add whatever herbs you like – parsley would be good. On top of the fish place a layer of leeks chopped into rings, perhaps some garlic too. Then add a layer of cooked potatoes cut into slices.
In a separate pan make a cheese sauce out of milk, flour, cheese and seasoning. Pour the cheese sauce over the potato. Then put the whole dish into a medium hot oven for 30 – 40 minutes. Serve hot.
This dish could be varied infinitely. You could include some chopped fennel as well as the leeks or some cooked carrot with the potato.
