Okra Thoran

Heat a tablespoon of oil and when it is hot add 1/8 tsp of black mustard seeds and ½ tsp urad dal (leave this out if you can’t get any). Add about 20g chopped onion and half a dozen fresh or dry curry leaves. Add a small red chilli broken into 2 or 3 pieces and a good pinch of turmeric powder. Add 1/8 cup of grated fresh coconut and stir till it starts to brown. Add the okra and stir well. Cover and cook over a low heat until tender. Add salt to taste and garnish with a further 1/8 cup of coconut.
