Grilled Courgettes and Mint

courgettes
olive oil
cumin seeds
lemon juice
flat leaf parsley
fresh mint
flaked almonds, toasted
salt and pepper
Cut the courgettes into chunks and mix them in a bowl with some olive oil and some cumin seeds. Heat a ridged griddle pan until it is very hot and grill the courgettes, turning frequently until they are well done. Turn them out into a bowl and add the lemon juice, parsley and mint and sprinkle with toasted almonds.
