3 large cucumbers
3 large onions
2oz salt
1 pint wine vinegar
1lb soft brown sugar
½ teaspoon turmeric
¼ teaspoon ground cloves
1 tablespoon mustard seeds
sterilised jars
Makes about 4 – 5lbs. Slice the cucumbers and onions very thinly and layer them in a colander, salting each layer. Put a weighted plate on top of them to press out the juices. Leave for 3 hours, then squeeze out as much juice as possible. Put the vinegar, sugar and spices in a pan and heat until the sugar dissolves. Add the cucumber and onion and simmer for no longer that one minute. Take the pan off the heat and remove the cucumber and
onions into jars with a slotted spoon. Boil the liquid for another 15 minutes and add to the jars. Seal and label the jars and keep them for a month before using.
