Corn Fritters

3oz flour
1tsp baking powder
1 lightly beaten egg
4 fl oz milk
½ tsp salt
1 tbsp melted butter (optional)
350g tin of organic sweetcorn, drained
Oil for frying
Make a batter out of the first five ingredients (and butter if you are including it) and stir in the sweetcorn kernels. Let the batter rest for a few minutes before heating up the oil in a frying pan. Drop spoonfuls of the mixture into the hot oil and press flat with a wooden spoon. Fry for about 5 minutes, or until golden. Turn over and repeat.
