2 large carrots, trimmed, peeled and grated
½ red onion, very finely chopped
4 tbsp chopped fresh coriander
½ tsp ground cumin
2 eggs, beaten
1 tbsp flour
2 oz parmesan cheese
Salt and pepper
Milk, enough to bind all the ingredients
Mix all the ingredients together until you have a fritter batter. Fry in hot oil, turning once, until golden. You can make fritters out of nearly anything – broccoli, courgette, peas and beans etc. with different dressings. Children love them, usually drowned in tomato ketchup, but it’s a good way to get them to eat vegetables.
