8 lemons
1lb fresh root ginger
1 heaped tbsp salt
1 tsp turmeric
½ tsp chilli powder
Cut each lemon into quarters and cut the quarters into three pieces. Peel the ginger and chop it coarsely. Place all the ingredients into a large bowl and mix well. Put the mixture into a sealed container and leave unopened for 10 days, shaking occasionally. Then transfer to smaller jars.
