Lemon and Red Chilli Pickle

8 lemons
1lb fresh ginger
6 large red chillies
4 tsp oil
2 tsp panch puran
1tsp turmeric
1 heaped tbsp salt
(Panch puran is a seed mixture that can be bought from ethnic food shops. It is a mixture of fennel, cumin, onion, fenugreek and mustard seeds)
Cut up the lemons and ginger . Halve the chillies lengthways. Heat the oil on a very low heat and add the panch puran, turmeric and salt. Add the lemons, ginger and chillies and mix thoroughly. When this mixture has warmed through. Leave it to cool. Put the mixture into a sealed container and leave unopened for 10 days, shaking occasionally. Then transfer to smaller jars.
