About 4oz strong cheese
4 spring onions finely sliced or equivalent amount of ordinary or red onion, plus a clove of garlic if wished.
1 potato, peeled and grated
6oz self-raising flour, plus some for dusting
1 tsp salt
½ teaspoon smoked paprika or cayenne
1 egg
2tbsp milk
1 tsp mustard, grain preferably
1 tsp thyme or rosemary or other herb
Preheat the oven to gas 5, 375ºF,190ºC and grease a baking sheet. Sift the flour, salt and paprika into a mixing bowl. Cut the cheese into small cubes. (You can experiment with different cheeses). Add the potato to the flour and then the spring onion, the thyme and two thirds of the cheese. Mix everything together. Beat the egg with the milk and the mustard and pour the mixture into the bowl. Bring it all together into a loose dough and transfer it to the baking sheet making a 6-inch round. Press the rest of the cheese into the top and dust with a little flour. Bake until golden brown (about 45minutes) and serve warm.
