500g organic fine oatmeal
¾ pint boiling water (perhaps slightly more)
2 tsps. salt
2oz fat or 2 tbsp oil
Mix all these together in a bowl and leave to cool. Divide the mixture into four pieces and roll out very thinly on an oiled or floured surface to a thickness of about 1/8th of an inch or 3mm. Cut out the oatcakes with a plain 2½ inch cutter and lay them on baking sheets. For this amount of oatmeal, you’ll need four baking sheets. Bake at gas mark 2, 300º F, 150º C for an hour and a half, moving the sheets around if you don’t have a fan oven. They should be pale golden when cooked. If you leave them in too long, they’ll go brown and bitter.
