Cauliflower Cake

1 medium cauliflower, broken into florets, boiled till soft and allowed to cool
1 onion, coarsely chopped
½ tsp finely chopped rosemary
10 medium eggs
Some chopped parsley or basil
180g plain flour
2½ tsp baking powder
½ tsp turmeric
200g mature cheese, grated
Salt and pepper
Heat the oven to Gas 4/350ºF180ºC. Cook the onion and rosemary in oil until soft. Allow to cool. Add the eggs and basil and mix well. Sift the flour and baking powder into a bowl. Add the cheese and 1½ tsp salt and plenty black pepper. Add the egg mix, and the cauliflower. Mix well. Put baking parchment in the bottom of a 24cm cake tin and grease the sides with butter. Bake in the centre of the oven until golden brown and set. Mine took about 1 hour and 15 minutes
