1lb rhubarb
½ lb lychees peeled or 1 tin
1 orange
2 tbs sugar
Cut up the rhubarb, mix in the lychees, put it all in a baking dish and sprinkle with sugar. Add the juice of an orange and bake at Gas mark 4/ 180ºC for about half an hour, or until the rhubarb is tender. If you use tinned lychees, you may need less sugar.
