Chocolate Log

4 oz (110g) of dried fruit chopped finely (you can use any vine fruits, candied peel, pineapple, crystallised ginger or anything else)
6 oz (175g) of nuts, gently roasted and coarsely chopped.
5-6 oz (150g) best quality dark chocolate, melted in a bowl above boiling water.
1 tablespoon sugar (or syrup)
½ teacup of dark rum
a few marshmallows chopped
a crunchie bar, broken up
Put all the dry ingredients, fruit, nuts, sugar, marshmallows and crunchie bar in a bowl and add the melted chocolate. Mix well and add rum until the mixture becomes soft and pliable but not too wet to hold its shape. Divide into 4 equal portions and roll each tightly in greaseproof paper. Wrap in clingfilm and store in the fridge. The wrapping can be tricky and the more tightly you do it, the better the log will be. If you’ve got some sort of tube to compress it in, that can work quite well. You can vary the ingredients as much as you like. The crunchie bar and marshmallows are not compulsory you could try biscuit or anything really. The important thing is to get the right ratio between the chocolate and the other ingredients. To serve, cut into slices.
