Cherry tomato compôte

Serves 4
Sweat together until soft:
2 tbsps olive oil
3 shallots finely chopped
1 clove garlic finely chopped
Add and sauté quickly for 3-4 minutes until the skins begin to split:
450g(1lb) cherry tomatoes
Add:
1 tsp each finely cut chives and basil
½ tsp finely cut tarragon
Salt and freshly ground pepper
Serve immediately
