2 large carrots
1 inch fresh root ginger
1 lime
Onion
garlic
Fresh coriander chopped
Stock
Sauté the onion, garlic and chopped fresh ginger as before. Add the peeled and thinly sliced carrots, a handful of chopped fresh coriander and a pint of stock. When the carrots are soft, liquidise the soup and add the grated zest and juice of a lime. Taste and adjust the seasoning if necessary.
