These gram flour vegetable fritters are very easy to make and a good way to get children to eat vegetables like cauliflower or broccoli. (Gram flour is chick pea flour, nutritious as well as being tasty)

For the batter
1 cup gram flour
oil for deep frying, such as sunflower
1 teaspoon garam masala
1 teaspoon salt
2 tablespoons of fenugreek
leaves, or fresh coriander


Sift the gram flour, garam masala and salt into a mixing
bowl. Add 1 tablespoon of hot oil and the fenugreek or coriander. Combine this mixture with water to make a slightly runny batter. Put the oil on to heat ready for deep frying. It will be hot enough (170ºC) when a drop of batter rises to the surface immediately. Cut the cauliflower or broccoli into florets, dip them in the batter and drop them into the hot oil. Turn them with a slotted spoon and remove to drain on kitchen paper when they are golden brown. Serve with ketchup or chutney. Or take 1 potato peeled, cut into thick chips and then sliced finely widthways 1 medium onion, halved and sliced thinly. Dry the potato as much as you can then drop the potato and onion into the batter mix. Take tablespoonfuls of this mixture and drop into the hot oil. Fry until golden as before.
