Make bread dough out of 1lb of strong white flour. Instead of forming it into loaves, take pieces of dough and roll them out into discs about 6 or 7 inches in diameter. Cover these and allow to rise. They probably won’t rise much. Heat a griddle or heavy frying pan on the hob. When it is really hot, drop a disc of dough on to it. After half a minute or so, turn it over and cook the other side. Sometimes they puff up like balloons, but it doesn’t matter if they don’t. Like so much else in cooking (and life) it’s a question of practice makes perfect, trial and error, if at first you don’t succeed…
