Meat Balls

1lb (450g) minced beef
1lb (450g) minced lamb
2 heaped tablespoons rice flour
3 tablespoons finely chopped flat leaf parsley
2 medium onions finely chopped
2 cloves garlic, crushed
Salt and pepper

Put all the ingredients into a food processor and blend until you have a fine smooth paste. If you don’t have a food processor, squash the meat with a wooden spoon and knead vigorously by hand. Form into balls. Size is important to get the right ratio of crisp outside to moist inside. Bigger than a walnut, but smaller than a ping pong ball, would be about right. Fry gently in oil or butter, turning, until they are brown all over. This should take about 10 minutes.
