Blackberry Fluff

Serves 6
300 g blackberries
1 tablespoon sugar
250g mascarpone
½ teaspoon vanilla extract
150ml cream

Gently heat the blackberries with the sugar for a few minutes (keeping a few aside to garnish the dish). Blend in a food processor and pass through a sieve. Beat the mascarpone and fold in the blackberry puree and vanilla extract. Loosely whip the cream and fold it in. Spoon into 6 dishes and decorate with blackberries.
