500g Jersey Royal Potatoes, sliced
250g Asparagus, trimmed and cut into 10cm lengths
200g Baby Spinach
50g butter, cubed
2 tbsp fresh dill, chopped
Juice of half a lemon
4 radishes, finely sliced, leaves reserved
300g smoked mackerel or mackerel fillets
Serves 4
If you use unsmoked mackerel cook it under the grill or bake in a hot oven first. At the same time, put the potatoes in a steamer over a pan of boiling water and steam for 5 minutes. Add the asparagus and steam for a further 5 minutes. Drain and remove the asparagus to a warm dish. Toss the potatoes with the spinach and butter in the hot steaming pan until the
butter has melted. Add the dill and lemon juice. Divide this mixture between the plates and top with the flaked fish and sliced radish. Spoon over the juices from the pan.
