250g plain flour
1 tsp baking powder
½ tsp smoked paprika
½ tsp fine sea salt
60g unsalted butter, chilled and cut into cubes
3 tbsp toasted sesame seeds
1½ tsp dried green peppercorns, roughly cracked
100ml iced water
Preheat the oven to 180C/350F/gas mark 4. Line 2 baking sheets with baking parchment. Sift together the flour, baking powder, paprika and salt into a bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs, and then stir in the sesame seeds and pepper. Add just enough iced water to create a firm dough. Roll it out between two sheets of baking parchment until quite thin – about 3mm thick – and cut into rounds with a 6cm plain cutter dipped in flour (you may want to do this in two batches). Place on the baking tray and prick all over with a fork. Bake for about twenty minutes until lightly golden. Transfer to a wire rack and leave to cool completely.
