Colcannon

1½ lb. hot mashed potato
1lb of cabbage or kale, finely shredded
2 tbs grated onion or spring onion
2 fluid ounces of cream or milk
2 oz butter
Salt and pepper

Cook the kale or cabbage until it is cooked but still crisp. Cook the onions in the milk until tender and mix them into the mash. Fold in the cabbage and turn into a warmed serving dish. Make several holes in the top and fill with butter.
