Stuffed baked peaches

Serves 4

2 ripe peaches
2 tbsp cocoa
4 amaretti biscuits crumbled
2 egg yolks
2 tbsp sugar
2 or 3 drops vanilla essence
1 tbsp pine nuts

Heat the oven to 200C (Gas 6). Halve the peaches and take out the stones. Place in an ovenproof dish. Combine all the other ingredients and heap onto the peach halves. Bake for 15 – 20 minutes.
