Chapattis

These are easy and fun to make (especially if you have an oven with an eye-level grill). Add water gradually to 2 cups of wholemeal flour and 1 teaspoon of salt until you have a soft dough. Knead the dough well, cover with a damp cloth and leave to stand for at least half an hour. Light the grill. Put a heavy frying pan on a medium heat and place a warm plate and a cloth nearby. Knead the dough again and break off ping pong sized balls (or slightly smaller). Roll one out thinly and evenly on a floured surface. Put it into the frying pan. When the edges begin to turn up, turn it over. When the surface appears bubbly, take it out and put it under the grill. It should puff up like a ball. When it collapses, take it out, put it on the plate and cover it with the cloth. You should be able to get a rhythm going with this so that as soon as you put one chapatti in the pan you start rolling out the next, then when the first one goes under the grill, the next one goes in the pan and so on. Children love chapattis as you can eat them with your fingers. You can even spread them with butter and jam!
