Potato and greens curry. Fry a finely chopped onion, 2 cloves of garlic, chopped, and an inch piece of ginger, chopped in some oil. Add one teaspoon of turmeric, ½ teaspoon chilli and 1 teaspoon of coriander powder. While the spices are frying (about 2 minutes) peel and dice 1lb of potatoes. Add to the spices. Chop 1lb spinach or other greens and stir into the potatoes. Continue cooking over a low light until the potatoes are tender. Sprinkle with 1 teaspoon of garam masala before serving with rice and dal
