1 large parsnip
2 large eating apples
1 medium egg, lightly beaten
2 level tablespoons plain flour
Salt and pepper
Oil for frying
Peel the parsnip, quarter it and remove any tough core. Quarter
the apples and core them. Don’t peel the apples. Grate the parsnip and apples. Combine the two and add egg, flour and salt and pepper. Mix well. Heat some oil in a non stick frying pan. When it is hot, take a handful of the mixture and mould into a rough patty, squeezing out any excess liquid. Fry the patty, pressing it down with a spatula to make a thin cake. Turn down the heat and fry until golden on both sides. Serve hot.
