Mattar paneer

This is a classic North Indian dish. It is extremely popular and easy. You can adapt the recipe to your own quantities.

500g paneer cubes
2 medium onions finely chopped
tin chopped tomatoes
3cups of frozen peas
2 cloves garlic finely chopped
1 inch fresh ginger finely chopped
1 chilli deseeded and finely chopped
2 heaped teaspoons ground coriander
2 teaspoons salt
3 heaped teaspoons garam masala
1½ teaspoons turmeric
1 teaspoon ground cumin
1 pinch cumin seeds

Shallow fry the paneer cubes in oil, turning frequently until golden brown. Drain on kitchen paper and reserve.

In another pan heat some oil and fry the cumin seeds until they splutter. Add the onions, garlic, ginger, spices and salt. Stir well and cook for a few more minutes. Add the tomatoes. When the tomatoes are mixed in, add the paneer. Simmer for a few more minutes then add the peas. Add a cup or two of water so that you have the consistency of a thickish soup. Simmer for about 20 minutes. Just before serving add a handful of chopped coriander leaf. Serve with rice or chapattis.
