Granola

100g nuts roughly chopped in a blender
250g jumbo oats
250g buckwheat flakes
2 tablespoons honey
2 tablespoons olive oil
2 tablespoons malt extract

Mix all ingredients together thoroughly and spread onto 2 well-oiled baking trays. Bake at 180º C/Gas 4 for 20 minutes or so until lightly browned. (Check after 10 minutes and redistribute around the trays to avoid burning). Allow to cool. Crumble the mixture and store in an airtight container.
