Cauliflower and Calabrese Salad with Gomasio

This is a simple way to serve either cauliflower or calabrese, or a mixture of both.

Cut the cauliflower or calabrese into florets and drop into a pan of boiling salted water. After 5 minutes, remove and plunge into cold water to cool. When cool, drain and toss in a vinaigrette of olive oil and white wine vinegar or lemon juice. Sprinkle with gomasio.

This is a condiment made from ground roasted sesame seeds and salt. Roast the sesame seeds in a hot pan stirring constantly until they begin to pop and go brown. Don’t let them burn. Grind them in a mortar and pestle with the salt – ten parts seed to one part salt.
