Belgian Cake

4oz butter or margarine
3oz raw brown sugar
2 eggs, beaten
5oz wholemeal self-raising flour
8 oz mincemeat
1 tbsp water

Cream the butter and sugar together until pale and fluffy. Fold in the flour and fold in the mincemeat. Spoon the mixture into a greased and base-lined 8” (20cm) square shallow cake tin. Level the surface. Bake in the oven at 170C/325F/Gas3 for about 30 minutes until well risen and golden. Cool in the tin.
