Baked Rhubarb

1kg rhubarb
1 orange
1 thumb sized piece of fresh ginger
100g castor sugar

Preheat the oven to very low- 140ºC/275ºF, Gas 1. Cut the rhubarb into short lengths – about 5cm and lay it in a baking dish. Grate the orange peel over it and squeeze over the orange juice. Peel the ginger and chop it very finely and sprinkle it over the rhubarb. Sprinkle the sugar over too. Bake it in the oven until it is cooked – about 40minutes.
