This is good with any cold meat
250g dried cranberries soaked overnight
piece of fresh ginger (5 cm) grated
1 cinnamon stick
2 tablespoons red wine or cider vinegar
2 tablespoons orange liqueur or other spirit Heat all the ingredients in a pan, simmering for 5 to 10 minutes. Allow to cool slightly and stir in the spirit. Allow to cool further and taste. If it’s not sweet enough, add a little sugar. When completely cool put in a sterilised jar and freeze or keep in the fridge
