This recipe makes quite a lot but I quite like it cold too.
½ oz butter
1 pt milk
1 onion peeled and spiked with 2 cloves
4oz fresh white breadcrumbs
½ oz flour
4 peppercorns
1 blade of mace
salt, pepper
Make a roux of the butter and flour. Add the milk gradually, stirring well and heat until it boils. Turn the heat down to minimum (or use a double boiler), and add all the other ingredients, mixing well. Cook very slowly for at least an hour adding more milk if needed. Remove the onion and spices and serve.
