Stewed Apricots

This dessert is ridiculously simple. Take a quantity of dark brown organic (and therefore unsulphured) Turkish apricots and soak them in water until they have become soft. This may take an hour or so. Remove any impurities and simmer the apricots in the soaking water for about 15 minutes. Serve with cream, ice cream or Greek yoghurt. Nobody will believe that you have only used apricots and water – no sugar, no spices. Because these are unpreserved and sun-dried fruit they achieve a delicious toffee-like flavour.
