Tomato, cucumber, olive and parsley salad

½ cucumber, peeled and cut into 1cm dice
3 ripe tomatoes, roughly chopped
10 black Kalamata olives, stoned (don’t use those tasteless ones out of jars!)
a handful of chopped flat leaf parsley (Curley parsley won’t do)

Mix everything together with a dribble of olive oi, a squeeze of lemon juice and serve.
