Falafel

½ lb cooked chick peas
1 ½ fl oz water
1 egg lightly beaten
1 tbsp chopped coriander
1 clove of garlic, crushed
½ tbsp olive oil
1 oz fresh white breadcrumbs
salt, pepper and a pinch each of ground turmeric, cumin and cayenne
 flour for dusting
oil for deep frying

Combine all the ingredients into a firm mixture. With wet hands, form into 2.5cm balls and flatten slightly. Coat with flour and deep fry in hot oil until lightly browned. Remove, drain on kitchen paper and serve hot.
